Topic - Spring Vegetables and Herbs

Today members were treated to a wonderful presentation by Clive Larkman of Larkman Nurseries. An expert in the field of herbs and vegetables, Clive entertained members with stories of his time as a Restaurateur in the U.K., as well as informing us about the many and varied types of vegetables. Clive is passionate about teaching people about cooking with herbs and gave us many fabulous ideas as well as answering questions. He has kindly allowed us to reproduce one of the great recipes he has up on his Website - Clive's Corner. Baked Cos with Oregano and Olive Oil

Ingredients

1 large Cos Lettuce - cut in half

1 tablespoon fresh Oregano

2 tablespoons Olive Oil

Coarse ground Salt and Pepper

Method

Cut Cos Lettuce in half lengthways. Preheat oven to 200 degrees Celcuis. Put half in fridge for future use. Mix olive oil and oregano and then brush on cut side of remaining half. Season with salt and pepper. Reduce oven to 180 degrees and place in oven cut side up for about 4 minutes depending on size of lettuce, basting with olive mix several times. When top leaves start to brown, lightly grill for another 2-3 minutes and then serve. Try a sprinkle of lemon or lime juice for a slightly different flavour.

The Betty Knox Award (Best Exhibit)

The award for the best exhibit for this month was won by Helen Fearns-Wannan for a beautiful display of Daffodils. It was truly picture perfect! The lovely array of yellows and pale lemons captured the eye of the Judge. Congratulations Helen, well done.

Popular Vote Award

As our photos this month attest, the Show Bench was awash with fabulous exhibits and the members had their work cut out for them choosing a favourite! This month a lovely pot of blue Hyacinths exhibited by Bob Yeomans was chosen - congratulations Bob!
